WOW, is it already Wednesday?
The last week has been crazy with work commitments and personal commitments so I haven’t had a non-cereal breakfast. While I’m normally not a cereal person, I have to say, I have found one brand that I love and that’s Mom’s Best! They have a version of the most common cereals and they’re free of artificial colors, flavorings, and weird preservatives.
Yep, toasty O’s and juice have been my mornings lately. But I have since found a new amazing juice! Grape juice! Yes, for my juicing challenge I have been making homemade grape juice from red grapes!
The only bad thing about this juice is that for a whole bag of grapes, that’s all you get! It’s pretty strong though, so I could add water for more volume if I wanted to. I absolutely love it though! So glad grapes are on sale at my local grocery store or I’d go broke because I’ve been drinking two of these a day!
For lunch today I had a true “southern” meal of some things my grandmother brought to me this past weekend including pinto beans, okra salad, and corn bread. I’m working on a post coming soon on making a traditional southern meal like this healthier! The okra salad is already amazingly healthy (okra, zucchini, tomatoes, and vinegar based) and with some tweaking, the cornbread is coming along. The beans are full of flavors and spices and so easy to prepare! I’m so excited to share this post with you!!
For dinner I had Aloo Gobi! If you’ve never had it, it’s pretty much the gateway to Indian food. It’s definitely one of my favorites! It’s based on onions, potatoes, and cauliflower and is made up similar to a stir fry dish. This post is coming tomorrow (Posted now, click here!!!). I promise you that you will love this dish! Even if you’ve never had Indian food before, this dish is easy to make and easy to love! It’s spiced well in flavor, not heat so no need to worry about it being too spicy.
And since this month is all about sensible snacking, I’ve been snacking on chocolate quinoa! Yes, chocolate and toasted quinoa. It’s wonderful and healthy. How did I ever go without this healthy snack?

IT’S OFFICIAL! I STARTED MY JUICING CHALLENGE!
I decided to start my juicing challenge with a nice colorful blend of carrots and blueberries!
Look at that gorgeous color! The carrots are giving me B-Carotene which my body absorbs as Vitamin A! Did you know carrots use to be grown for their leaves and not the rich, mineral containing orange vegetable we eat today? Their cousins are actually fennel and dill. Weird huh? I never think of carrot leaves as being useful.
The blueberries helped sweeten and take the bite off the carrot juice. I really enjoyed the flavor, and the vitamins after the workout yesterday! I put the juice in a mason jar because I have read that’s the best way to transport it if you are not drinking it immediately. Since I was running late for work already, I thought it would be good to drink while checking emails…and it was! The only negative is that the tiny pieces of pulp from the carrots are a little sticky to my throat since they were mixed into the juice on my walk to work.
Day 1 complete! Tomorrow my plan is to create a juice combination without any carrots! Hmmm maybe mango and strawberry? Or Apple, Ginger, and Orange? Any suggestions?
I can’t believe my weekend is already over, where did it go? J and I slept in this morning and then went to breakfast at our favorite pancake place. It’s extra special because each table has a little griddle in the center so that you get to cook your own pancakes. We had blueberry and walnut whole wheat pancakes! I would have taken a picture….but I only remembered after I was full! We ran a few errands afterwards, mostly to pick up fruits and carrots to start my juicing! I decided to start with fruits mostly and ease into vegetables. I’m really excited about the blueberries and mango! Can’t wait to see what mixtures I can make up!
With some chores out of the way, J and I decided to go climbing. Since we are still tired from yesterday, we decided it would be a good idea to ride our bikes to and from the gym for added exercise. After climbing till 7pm, we then took rode our bikes to a nearby greenway for some paved riding without the bother of cars chasing us down. By the time we got back to the apartment we both looked like we had been run over by a bus! Did I mention, it was 95 degrees today!?! Once we finished complaining though, we looked back and saw a beautiful red sunset. The picture doesn’t do it justice as we only had our lousy phone cameras.
All the exercising this weekend had J and I both hungry and dehydrated. After chugging water till our stomachs hurt, we pulled out a frozen cheese pizza (Against the Grain) from the freezer. After topping it with some baby bellas, green peppers, and olives we placed it in the oven and awaited impatiently for it to be finished.
The pizza was delicious and well deserved after all the exercising this weekend! Tomorrow starts the juicing challenge and I’m excited to see what’s in store, even if it means I still have to go to work tomorrow.
