WIAW – with Vacation!


 

It’s finally hump day! This has been a long week after my great weekend with J! I had my first Maryland blue crab fest, and it was excellent! I loved it so much.

I promise we had more than crab! See- coleslaw, soup, potato salad, and beer (cider for some of us). What could be better?

There was so much crab left over that we picked the rest of the meat and J’s dad made us crab cakes the next night. Because J’s sister and I require gluten and yeast free, these crab cakes were…crab! What an amazing concept, huh?! They were awesome with just a bit of cornmeal to bind them.

Vacation has been so wonderful, now I have to get back into work though and make my own meals. Guess I forgot to say above, J’s dad makes the most amazing cappuccinos and eggs (coddled, they’re amazing) every morning. I wasn’t quite sure what to do with myself on Monday when breakfast wasn’t made for me. J’s parents are the best! So to make up for having to make my own breakfast, I’ve been enjoying overnight oats. Flavor:  chocolate and strawberries. You should try them, they’re healthy!!! (This has been my snack food too, I seriously have been eating on average three jars a day!)

Which is good because I’m eating it all the time, even for dessert! I’ve been pairing oats with lots of fun juices for my juicing challenge. Lately, I’ve been on a peach kick, with carrots and or kale.

For lunch today I had some wonderful sautéed bok choy with a ginger, soy sauce marinade and crunch sliced almonds. Stay tuned, recipe coming soon!

 And for dinner, what could be better than a spicy thai curry? Just to kick things up a notch! This simple red curry with squash and mushrooms was not only tasty, but filling and great as a quick, light dinner in the summer. This makes the second recipe I owe you, promise it will be up by the end of the day!

It has been difficult adjusting back to normal life haha! But as you can see, I’ve been treating myself with great food! Two recipes to be published today, so wait and see! Thursday will be a big post with exciting news for cragsandveggies, make sure you stop by to hear what it is!

What I Ate Wednesday!

WOW, is it already Wednesday?


The last week has been crazy with work commitments and personal commitments so I haven’t had a non-cereal breakfast. While I’m normally not a cereal person, I have to say, I have found one brand that I love and that’s Mom’s Best! They have a version of the most common cereals and they’re free of artificial colors, flavorings, and weird preservatives.

Yep, toasty O’s and juice have been my mornings lately. But I have since found a new amazing juice! Grape juice! Yes, for my juicing challenge I have been making homemade grape juice from red grapes!

The only bad thing about this juice is that for a whole bag of grapes, that’s all you get! It’s pretty strong though, so I could add water for more volume if I wanted to. I absolutely love it though! So glad grapes are on sale at my local grocery store or I’d go broke because I’ve been drinking two of these a day!

For lunch today I had a true “southern” meal of some things my grandmother brought to me this past weekend including pinto beans, okra salad, and corn bread. I’m working on a post coming soon on making a traditional southern meal like this healthier! The okra salad is already amazingly healthy (okra, zucchini, tomatoes, and vinegar based) and with some tweaking, the cornbread is coming along. The beans are full of flavors and spices and so easy to prepare! I’m so excited to share this post with you!!

For dinner I had Aloo Gobi! If you’ve never had it, it’s pretty much the gateway to Indian food. It’s definitely one of my favorites! It’s based on onions, potatoes, and cauliflower and is made up similar to a stir fry dish. This post is coming tomorrow (Posted now, click here!!!). I promise you that you will love this dish! Even if you’ve never had Indian food before, this dish is easy to make and easy to love! It’s spiced well in flavor, not heat so no need to worry about it being too spicy.

And since this month is all about sensible snacking, I’ve been snacking on chocolate quinoa! Yes, chocolate and toasted quinoa. It’s wonderful and healthy. How did I ever go without this healthy snack?

Birthday Weekend

This weekend was a lot of fun and kept me away from any blogging updates! Sorry!!!

On Saturday I celebrated my birthday with friends and family by climbing and then eating at my favorite Mexican restaurant.

Many updates soon tomorrow, I promise!!! My juice yesterday was carrot and blueberry again!

Overall, not so bad. I really like my fresh squeezed juice the best though!

I’m so excited for the weekend! It’s going to be filled with parties and climbing! So I decided to clean out the fridge this morning since I won’t be eating too much at home. Upon opening the fridge, I saw the carton of blueberries I bought last weekend with just a few blueberries left and one carton of strawberries half filled.

Today I tried beet and mango juice as part of my juicing challenge!

I didn’t think it was too bad. Could definitely be better with some agave, but overall not horrible. J however promptly said, “tastes like dirt” after just one tiny drop!!! Haha guess my J is not a beet person.

What I Ate Wednesday!

So today was a really long day! I mean super long!!!! Sorry for the short post, but I did very little than work, and work, and work some more! So, on to bigger and better things…..WIAW hosted by Jenn

My juicing challenge started off this morning with some carrot and mango juice! Yummy!! One small problem though, the mangos didn’t juice very well. I felt like I was mostly drinking carrot juice. I really wanted some mango flare in my juice!

As a snack, I got an iced soymisto from starbucks! Always needing caffeine on a busy day, and no better way than starbucks!

And for lunch, (@ 4pm!!!) I had the last quinoa and black bean burger leftovers. It was really good and I was so glad there was extra honey mustard on it as an added treat. No worries, I don’t eat all my veggie burgers without additional veggies. I don’t think veggies transport that well though on sandwiches. My sandwich always seems mushy with tomatoes, and lettuce….well I need lettuce AND tomato!

I didn’t get dinner till 11pm! WOWIES! I know super late. I was so hungry that I just scarfed it all down! J took me out though to a late night restaurant and I had a spinach wrap with portobello mushrooms, guacamole, and honey mustard.

Not very much food today! 😦 I have a habit when I’m stressed of not eating. It seems like people usually over eat or under eat when they’re stressed.

Do you over or under eat when you are stressed? How do you transport veggies on a sandwich so your bread doesn’t get soggy?

Dressed up Burgers and Fries

Even though I had to work on Memorial Day, J and I didn’t want to miss celebrating with an all-American meal- burgers and fries! Of course, I really mean a veggie burger and baked fries, but none the less, we were two of the many people out grilling yesterday. We dressed up these burgers and fries to make them special for Memorial Day!

It seems like many people are making veggie burgers from black beans and rice or quinoa lately. Even one of my favorite burger restaurants has a veggie burger with black beans, rice, and sweet potato. So of course, I had to make sure I could re-create these burgers at home. I prefer the quinoa to rice for two reasons. First, the texture is more like a burger. Second, the added protein of quinoa.

As good as this burger looks, it’s even better when you here how easy it is to make!

Black Bean Burgers

  • 1 can black beans rinsed
  • 1/2 cup quinoa
  • 1 Tbs olive oil
  • 1/2 cup oats (can use gluten free)
  • 1 egg white
  • 1 tsp chili powder
  • 2 Tbs ketchup
  • 1 tsp garlic powder
  • 1 Tbs onion powder
  • 2 Tbs worcestershire sauce

Roast the quinoa in olive oil over medium heat. A friend taught me to do this before cooking quinoa and it adds a nuttier flavor to the quinoa and keeps it from getting mushy I think. When it’s slightly roasted (you’re just doing this as the bottom of the pot heats up), add one cup of water and turn back to low heat. The quinoa should be finished in 15-20 minutes. IE- it will have absorbed the water and be light and fluffy.

Combine the cooked quinoa and all other ingredients into a mixing bowl and mix with your hands. You should be able to make 6-8 burgers depending on the size.

At this point you can cook them on the stove top or grill them. When cooking on the stove top I had enough olive oil to very lightly cover the bottom of the pan and cook them on medium to medium high heat. When the burger is lightly browned, I flip and let the other side reach a lightly brown and toasty color too. We however decided to cook ours on the grill. J grilled ours on aluminum foil over our charcoal grill till both sides looked crispy.

 Place them on a bun and top them with your favorite toppings and Wa Lah! You have a great and healthy burger! We chose rolls from Against the Grain and blue cheese for our burgers.

What goes with a burger better than french fries? I mean really, was there ever a more perfect pair? I absolutely hate knowing that when I eat french fries, I’m eating mostly grease though! Yucky! These fries are simple, fast, and flavorful!

Baked French Fries

  • Golden Yukon Potatoes peeled cut into french fry size
  • Extra Virgin Olive Oil
  • Garlic
  • Multi-color peppercorn
  • Thyme
  • Oregano

Once potatoes are cut into fry shapes, toss them till they are LIGHTLY coated in olive oil. We used freshly ground garlic and peppercorns  and dried thyme and oregano to lightly season the fries.

Place on a baking sheet at 425F and bake for roughly 30 minutes, flipping once through the heating process.

Yummy! When fries are golden on both sides, remove from oven and let cool for a 5 minutes before removing from pan. Next step, ENJOY!!!

I worked from 8am till 7pm today, wow! Since I’m not a morning person so I was already running late for work, I decided to juice this evening. I took advice from your comments yesterday and decided to try apple, blueberry, and lemon!

I juiced the apples first, followed by the blueberries, and then hand squeezed the lemons. The juice didn’t mix initially and made a gorgeous glass.

The juice had a wonderful flavor! A bit sour, but very natural- almost like a thick fruit lemonade! I loved it!!!

Thanks for the great juice today! Any ideas for tomorrow? I’m thinking something with mango!
